I consider the food processor to be essential in my raw kitchen. It’s great for shredding vegetables for cabbage slaw or homemade sauerkraut, and it is great for sauces, spreads, salad dressings as well as making recipes for the dehydrator like veggie burgers, taco meat. It’s also great for making raw desserts like chocolate mousse or doughnut holes.
There is a great variety of food processors on the market so find one that fits your budget and countertop. I use a Cuisinart , but as long as you can both shred vegetables with a tall blade and blend with an S blade, there are many good brands available.
