I will be honest. There is nothing more satisfying then a glass of organic freshly-made green veggie juice. However, juicing takes time and when you need a quick pick me up sometimes you just don’t have the time. Often with my juicer, I make enough juice for a few days at a time and storage it in an airtight container in the refrigerator. But if there is no nice in the fridge and I want something now, this is a quick way to do it. I have to give kudos to Elaina Love and her nut milk bag for this idea because I wouldn’t have thought of it myself.

Ingredients:
(really whatever you want/like but this is what I use to make a great taste, vitamin and antioxidant rich juice)
1 Large Handful of Spinach- Good Source of many vitamins and minerals
1 Large Beet (cut into a few smaller pieces) -Beets are a unique source of phytonutrients called betalains. Betanin and vulgaxanthin are the two best-studied betalains from beets, and both have been shown to provide antioxidant, anti-inflammatory, and detoxification support.
2 Carrots (cut into a few smaller pieces)- rich in vitamins, carotenoids and other phytonutrients.
2 Apples (cut into a few smaller pieces)- to add some sweetness
1/2 inch piece of Ginger- Has anti-inflammatory properties and gives it a nice kick
1 palmful of fresh mint- adds a nice taste and aids in digestion
Preparation:
Throw everything in your Vitamix (or similarly powered blender)

Fill halfway up with water and blend

Use Elaina Love’s Nut Milk Bag and pour the juice from the blender into the Nut Milk Bag that is sitting in a large bowl. Squeeze out as much liquid as you can. Discard the pulp.

This should yield about 3 glasses.
